Ok guys, here is the bottom line.
You don't have to agree with me, but here are my findings.
With the D40 and the D200, you can crank up the saturation and contrast for that pop, and it will NOT degrade the skin tone. With the D7000, you have to extensively fiddle with the picture control settings to get it right. If you turn up the contrast or saturation on the D7000 just a bit, it will ruin the skin tone dramatically.
Let's say I want to take a picture of my wife in a flower field with the D7000. I don't want to turn the contrast and saturation down too much because she is in a flower field and I want to capture the flowers as they are, vibrant. But If I leave contrast at 1, it will ruin the skin but will capture the flowers as they are. If I turn down the contrast a few notch, it will save the skin tone but the flowers wont be as pretty and the picture will look dull overall. I can't have both. I have to use layers in post processing to have good skin and popping background.
With the D40 and the D200, I can leave the contrast and saturation permanently at +1 setting for that pop I like, while producing accurate and pleasant looking skin. For some reasons, the old CCD sensors are able to elevate contrast without making the skin look weird.
And for Jack Hogan, I see what you are saying. I don't have a clue yet when it comes to editing RAW and messing with different layers and curves, but I'm not a total newbie either. The point i'm making is that the D40 and the D200 produces much nicer skin easier and quicker, without having to mess with RAW and other extensive PP methods.
What if I wanted to take pictures of my nephews playing in a colorful playground? By your argument I would have to use Portrat setting with very subdued levels in all sub adjustment settings, for a result that will be very dull. But at least the skin won't have been ruined.
With the D40 and D200, I don't have to do that. I can just use normal mode or a custom mode with elevated contrast and saturation setting for a vibrant and clear picture, without degrading flesh tone.
This is not the 1000000th complaint against the D7000. It is just an observation. Not everything that is new is better in all aspects just because it's new. Like how they got rid of the ML-L3 remote interface in the D3100.
